About Us - Oyster Farmer Anthony Bacon

Anthony started off working part-time developing a small-scale

oyster farming operation.

 

He was immediately drawn to the lifestyle of working by the water and has continued to grow the farm every year to the point where Wonboyn Wilderness Oysters are now one of the leading producers in the region.

 

Wonboyn Wilderness Oysters uses slightly different techniques to other farms in Southern NSW, developed by trying lots of different things and seeing what works best. Beginning the process by growing oysters within high flowing currents near the

river mouth, before moving them to a more still area to fatten.

In Wonboyn Lake, the exceptional water conditions play a large part in the final product - a deep-cupped Sydney Rock Oyster with a clean, fresh, sweet and briny flavour that is a delight to oyster lovers all around the world.
